Recipe: Signature Carrot Cake

The incredibly moist, light and fluffy signature Carrot Cake we all need!

Ingredients

3 cups plain flour

3 tsp baking powder

3/4 tsp salt

1/2 tsp cinnamon

440ml vegetable oil

1 & 1/2 cups castor sugar

1 & 1/2 cups brown sugar

1 & 1/2 tsp vanilla extract

6 eggs

2 cups grated carrot

Method

1. Whisk both sugars and oil together

2. Whisk eggs, vanilla essence into the sugars

3. Add flour, salt, cinnamon, baking powder and fold in until combines

4. Lightly fold the grated carrots through

5. Pour into an 8inch lined round tin and bake for 35-45 minutes in a pre-heated oven at  170 degrees

Cream Cheese Frosting

½ cup unsalted butter softened

200gram cream cheese softened

1 teaspoon vanilla extract

¼ teaspoon salt

4 cups icing sugar

Whisky all ingredients together until fluffy.
